Ingredients (Serves 4)

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken thighs
  • 455g fresh green beans
  • 400g cherry tomatoes
  • 115g fresh basil (or basil pesto)
  • Salt & pepper to taste

Preparation Method

Method of Preparation:

 Step 1: Grill the chicken. In a large pan, heat olive oil to a medium temperature. Season chicken thighs with salt and pepper, then cook until golden and fully cooked through.

 Slice the meat from the pan into strips.

Step 2: Cook the Greens Add green beans to the same pan. Sauté until they are tender yet crisp, keeping that perfect bite.

 Step 3: Bring It Together. Sliced chicken should be returned to the pan. Basil or pesto and cherry tomatoes should be added. Toss everything together until fragrant and thoroughly combined.

Step 4: Use and Keep Serve right away for the best flavor.

Or, portion into containers for meal prep and store in the refrigerator for up to four days.
